How do I set up a couple of invoice templates with different names and bank details on them?

Click the Gear icon → "Lists" → "All lists" → "Custom Form Styles" → "New Style" → "Invoice". Once you have your invoice prepared, make a copy and edit it with the new information in the same menu.
